Oatmeal cookies. What a classic. Go on, close your eyes and indulge yourself for a moment (after reading this intro, obviously). Now, let your mind paint a picture those warm, soft, chewy cookies straight out of the oven. The fresh baked aroma. Going slightly weak in the knees? That’s perfectly normal. We probably should have warned you to hold on to something.
But then there’s that one real kicker: sugar, low quality ingredients, allergens… Ok, reality check. To help resolve such turmoil, we’ve enlisted the help of our friends at Freedom Foods and their Nutritional Adviser, Dr Joanna McMillan. She’s one of Australia’s best-known health, nutrition and healthy lifestyle experts. And as for Freedom Foods? They’ve been doing this whole “health food movement” thing for a while. Like since 1990. Together, they’ve whipped up an oat cookie recipe free from all those things we’d rather do without, while leaving all those things like taste, texture and complete enjoyment. Nice move, Freedom. Nice move. Basically, spice it up with some chai, subtract refined sugars, mix in some seeds and now we’re cooking. Let this serve as further solidification of our working theory that chai-spiced anything is just plain better. These cookies are perfect as a morning or afternoon snack with your tea or coffee. Actually, let’s simplify that, they’re just perfect.

Chai Spiced Oat & Seed Cookies
Vegan, Vegetarian, Refined sugar and Dairy free
Makes 12 cookies
Time: 40 mins
A serving size is one cookie… we say as we smirk and reach for another one…
Put the chai spices in a small bowl and cover with ¼ cup of boiling water. Steep for 10 minutes. Drain through a tea strainer (or small sieve) into another bowl and add the raisins. Soak for at least 10 minutes, stirring every so often.
Preheat the oven to 180C. Have a non-stick baking tray ready, or line a baking tray with baking paper.
In a separate larger bowl, combine the oats, coconut, almond meal and three types of seeds.
Combine ingredients and roll into 12 cookies
Bake until desired firmness
Let cool (if you can play the waiting game) and enjoy!
